2 cups sugar
½ cup canola oil
9 TBSP cocoa
½ tsp. salt
2 tsp. vanilla
4 eggs
2 tsp. baking powder
2 cups flour
1/4 cup powered sugar (reserve for coating dough)
Cream together the sugar and oil. Mix in the cocoa, salt, and vanilla. Mix in eggs one at a time, then add dry ingredients. Dough will be pretty thin (for cookie dough). Chill dough for at least an hour in the fridge or 30 minutes in the freezer or until firm. Form 1” balls and roll in powdered sugar. Bake on cookie sheet at 350° F for 10 minutes. Freezes well (best when eaten straight from the freezer).
