1 ½ TBSP oil
2 eggs
½ tsp. baking powder
½ tsp. salt
½ tsp. vanilla
1 cup sugar
1 ½ cup all purpose flour
2 ½ cup milk
In a large mixing bowl, whisk together the oil, eggs, baking powder, salt and vanilla. Slowly whisk in all of the sugar, then half of the flour and half of the milk. When mixture is well blended, add in the rest of the flour and milk. Using a hand held mixture blend until smooth.
Heat a lightly oiled griddle or frying pan over medium to medium low heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula that has been sprayed with lightly with oil, flip and cook the other side. Spray griddle and spatula between each crepe. Lightly stir batter between crepes as batter tends to separate slightly. Serve hot. Makes 14 crepes. Freezes well.

My husband is the crepe maker in our family. All these years we have been married I always thought his dad made these crepes and taught his boys how to make them as well. I was intimated by the process and left the crepe making for him. Turns out when my husband was a young teenager, he and his friends made these crepes for breakfast during sleepovers! As soon as I learned a 13 year old could make these, I gave them a try. They are easy once you get the hang of it and I love how sweet this recipe is. Thanks to the Cox family for teaching my husband how to make these!

This recipe looks fabulous. As I try to watch sugar intake, I know that in a lot of breads and cakes you can omit up to 1/2 the sugar and still have very satisfactory results. Have you tried minimizing sugar for this recipe?
Hi Rebekah, yes you can cut the sugar in half in this recipe and they still taste good. My husband thinks they always need the full 1 cup, but I like them with a half cup just fine.
Crepes are one of our favorite things to eat. Our recipe is very similar.
Do you have any good suggestions on breakfast or dinner ideas that don't have any form of milk, eggs, cheese, or soy in it and isn't too spicy? I thought I would ask you since you have so many recipes.

Are you having food allergy issues? {hugs}. If so, I have more suggestions for you that can help convert your favorite meals.
Here are a few ideas that quickly come to mind:
Breakfast ideas w/o dairy, eggs or soy: waffles with real maple syrup, toast with jam, toasted bagel with jam, oatmeal with a little brown sugar, fresh fruit. Cereal with rice milk is another option.
Dinner ideas w/o dairy, eggs or soy: Mexican food is easy. Just leave out the cheese and sour cream and add in guacamole for something creamy (nachos, burritos, fajitas, tacos). Just make them as mild as you need.
Chicken noodle soup or minestrone soup with bread sticks are also good options.
Something simple like a chicken breast seared in olive oil, then baked in the oven. Served with steamed or roasted vegetables and a side of rice cooked in chicken broth . . .
Are these the kind of things you are looking for?

Hi Emily These ideas are exactly what I needed. We are eliminating everything from my diet for 3 weeks to see if it help Andrew and I was starting to get frustrated with what I couldn't eat. Hi Heather, while I was nursing I eliminated all forms of dairy and soy and it took almost 3 weeks to see a difference, but the difference was HUGE! I hope your diet helps Andrew feel better. What are his symptoms?

Just swap out the milk for water and use canola oil instead of soybean oil. It's SO good and easy.
