Roasted Sweet Potatoes with black beans

2 sweet potatoes
1 jalapeno, seeded and finely diced
1 red pepper, diced small
1 red onion, diced small
2 tsp. olive oil
1 tsp. cumin
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. black pepper


1 15oz. can black beans, well rinsed
1/4 cup cilantro, finely chopped
2 TBSP lime juice

1/4 cup shredded cheese (optional)

Preheat oven to 425 F. In large bowl, mix together the vegetables. Then toss in olive oil and spices. Roast for 18-22 minutes, stirring occasionally. Remove from oven and allow the vegetables to cool slightly. Toss with black beans, cilantro and lime juice. Then add shredded cheese before serving.
